Cangrejos Enchilados

- Cumin - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Jalapeno pepper - 1, seeded and chopped
- Red bell pepper - 1, chopped
- Green bell pepper - 1, chopped
- Tomatoes - 2 large, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Crab - 2 lbs, cleaned and cracked
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the tomatoes, bell peppers, jalapeno pepper, cilantro, cumin, salt, and pepper. Cook for 10 minutes, stirring occasionally.
- Add the crab to the pot and stir to coat with the sauce.
- Cover the pot and simmer for 15-20 minutes, or until the crab is cooked through.
- Serve hot with lime wedges.
