Cabbage and Turkey Soup
This hearty cabbage and turkey soup is packed with flavor and nutritious ingredients.
Ingredients - Serves 6
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Diced tomatoes - 1 can (14.5 oz)
- Chicken broth - 6 cups
- Ground turkey - 1 pound
- Cabbage - 1 small head, shredded
- Celery - 2 stalks, sliced
- Carrots - 2 medium, sliced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
- Add the carrots, celery, and cabbage, and cook for another 5 minutes.
- Push the vegetables to one side of the pot and add the ground turkey. Cook until browned, breaking it up into small pieces.
- Stir in the chicken broth, diced tomatoes, bay leaf, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
