Let's Get Started

  1. Rinse the beef tripe under cold water and place it in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for 10 minutes. Drain and set aside.
  2. In the same pot, heat some oil over medium heat. Add the onions and garlic and cook until soft and fragrant.
  3. Add the carrots, celery, and potatoes to the pot and cook for a few minutes until they start to soften.
  4. Add the canned tomatoes, beef broth, bay leaves, paprika, salt, and pepper to the pot. Bring to a boil.
  5. Add the boiled tripe to the pot. Reduce the heat and simmer for about 2 hours, or until the tripe is tender.
  6. Adjust the seasoning if necessary. Serve the buseca hot, garnished with fresh parsley if desired.
