Buseca
Buseca is a traditional Argentine stew made from beef tripe, vegetables, and spices. It's a hearty and flavorful dish that's perfect for cold winter nights.
Ingredients - Serves 6
- Salt and pepper - To taste
- Paprika - 1 tablespoon
- Bay leaves - 2
- Beef broth - 6 cups
- Canned tomatoes - 1 can, diced
- Potatoes - 2, peeled and chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Beef tripe - 1 kg, cleaned and cut into pieces
Let's Get Started
- Rinse the beef tripe under cold water and place it in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for 10 minutes. Drain and set aside.
- In the same pot, heat some oil over medium heat. Add the onions and garlic and cook until soft and fragrant.
- Add the carrots, celery, and potatoes to the pot and cook for a few minutes until they start to soften.
- Add the canned tomatoes, beef broth, bay leaves, paprika, salt, and pepper to the pot. Bring to a boil.
- Add the boiled tripe to the pot. Reduce the heat and simmer for about 2 hours, or until the tripe is tender.
- Adjust the seasoning if necessary. Serve the buseca hot, garnished with fresh parsley if desired.
