Buffalo Chicken Hashbrowns

Ingredients - Serves 4
- Green onions - 2, sliced
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Hashbrowns - 4 cups, frozen
- Olive oil - 2 tablespoons
- Buffalo sauce - 1/2 cup
- Chicken breasts - 2, boneless and skinless
Let's Get Started
- Preheat the oven to 375°F.
- Place the chicken breasts in a baking dish and pour the buffalo sauce over them. Bake for 20-25 minutes, or until the chicken is cooked through.
- While the chicken is cooking, heat the olive oil in a large skillet over medium heat. Add the hashbrowns, onion, and garlic and cook until the hashbrowns are crispy and golden.
- Shred the cooked chicken and add it to the skillet. Season with salt and pepper.
- Sprinkle the shredded cheese over the top of the hashbrowns and chicken. Cover the skillet and cook until the cheese is melted.
- Top with sliced green onions before serving.
