Broccoli Curry
This flavorful broccoli curry is made with fresh broccoli florets, aromatic spices, and creamy coconut milk.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt - To taste
- Lime juice - 1 tablespoon
- Vegetable broth - 1/2 cup
- Coconut milk - 1 can (400ml)
- Coriander - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Curry powder - 2 teaspoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Broccoli - 1 head, cut into florets
Let's Get Started
- Heat oil in a large pan over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the curry powder, turmeric, cumin, and coriander. Stir well to coat the onions and spices.
- Add the broccoli florets to the pan and stir to combine with the spices.
- Pour in the coconut milk and vegetable broth. Bring to a simmer and cook for 10-12 minutes, or until the broccoli is tender.
- Stir in the lime juice and season with salt to taste.
- Garnish with fresh cilantro before serving.
- Serve the broccoli curry over steamed rice or with naan bread.
