Bok Choy and Shrimp Curry
This flavorful curry combines tender bok choy and succulent shrimp in a rich and aromatic sauce.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Brown sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Red curry paste - 2 tablespoons
- Coconut milk - 1 can (14 oz)
- Shrimp - 1 pound, peeled and deveined
- Bok choy - 4 heads, chopped
Let's Get Started
- Heat vegetable oil in a large pan over medium heat.
- Add garlic and ginger, and sauté for 1-2 minutes until fragrant.
- Add red curry paste and cook for another minute.
- Add bok choy and cook for 3-4 minutes until slightly wilted.
- Push the bok choy to one side of the pan and add shrimp to the other side.
- Cook shrimp for 2-3 minutes per side until pink and cooked through.
- Pour in coconut milk, fish sauce, brown sugar, and lime juice. Stir well to combine.
- Simmer for 5 minutes, allowing the flavors to meld together.
- Season with salt to taste.
- Serve the curry over steamed rice or noodles.
- Garnish with fresh cilantro before serving.
