  3. Add the cooked and shredded beef to the skillet and stir to combine.
  4. Sprinkle the flour over the beef mixture and cook for 1 minute, stirring constantly.
  5. Gradually pour in the beef broth and milk, stirring constantly to avoid lumps.
  6. Add the Dijon mustard, nutmeg, salt, and pepper. Cook until the mixture thickens, about 5 minutes.
  7. Transfer the beef mixture to a bowl and let it cool completely.
  8. Once cooled, shape the mixture into small balls, about 1 inch in diameter.
  9. Dip each ball into the beaten eggs, then roll in breadcrumbs to coat evenly.
  10. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  11. Fry the bitterballen in batches until golden brown and crispy, about 3-4 minutes per batch.
  12. Remove from the oil and drain on paper towels.
  13. Serve hot with your favorite dipping sauce.
