Bigos
Bigos is a traditional Polish dish made with sauerkraut, various meats, and spices. It is a hearty and flavorful stew that is perfect for cold winter days.
Ingredients - Serves 6
- Salt and pepper - To taste
- Allspice berries - 1 teaspoon
- Juniper berries - 1 teaspoon
- Bay leaves - 2
- Tomato paste - 2 tablespoons
- Dried mushrooms - 50g, soaked in water
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Kielbasa sausage - 300g, sliced
- Beef stew meat - 500g, cubed
- Pork shoulder - 500g, cubed
- Bacon - 200g, diced
- Sauerkraut - 1 kg
Let's Get Started
- In a large pot, cook the diced bacon until crispy. Remove the bacon and set aside.
- In the same pot, brown the pork shoulder and beef stew meat in the bacon fat.
- Add the chopped onion and minced garlic to the pot and cook until softened.
- Drain the sauerkraut and rinse it under cold water. Add the sauerkraut to the pot.
- Add the sliced kielbasa sausage, soaked dried mushrooms, tomato paste, bay leaves, juniper berries, and allspice berries to the pot.
- Season with salt and pepper to taste.
- Cover the pot and simmer on low heat for about 3 hours, stirring occasionally.
- Before serving, stir in the crispy bacon.
- Serve hot with crusty bread or boiled potatoes.
