Bierwurst
Bierwurst is a German sausage made with pork, beef, and spices. It is often enjoyed with beer and mustard.
Ingredients - Serves 6
- Hog casings - 6 feet
- Curing salt - 1/4 teaspoon
- Ground mace - 1/4 teaspoon
- Ground coriander - 1/2 teaspoon
- Ground nutmeg - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- White pepper - 1 teaspoon
- Salt - 2 teaspoons
- Ice water - 1/2 cup
- Beef chuck - 1 pound, ground
- Pork shoulder - 1 pound, ground
Let's Get Started
- In a large mixing bowl, combine the ground pork, ground beef, ice water, salt, white pepper, ground ginger, ground nutmeg, ground coriander, ground mace, and curing salt. Mix well until all the ingredients are evenly incorporated.
- Prepare the hog casings by rinsing them thoroughly under cold water. Place one end of the casing on the nozzle of a sausage stuffer and slowly feed the casing onto the nozzle, leaving a few inches of casing hanging off the end.
- Fill the sausage stuffer with the meat mixture and slowly push the mixture into the casing, allowing the casing to fill up evenly. Twist the sausage into 6-inch links, tying off the ends with kitchen twine.
- Bring a large pot of water to a boil. Add the sausages and cook for 20 minutes, or until cooked through.
- Remove the sausages from the pot and let them cool for a few minutes. Serve the bierwurst with mustard and enjoy with a cold beer!
