Besarah
Besarah is a traditional Egyptian dish made with fava beans, herbs, and spices.
Ingredients - Serves 4
- Lemon juice - 2 tablespoons
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Dill - 1/2 cup, chopped
- Parsley - 1 cup, chopped
- Cilantro - 1 cup, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Dried fava beans - 2 cups
Let's Get Started
- Soak the dried fava beans in water overnight. Drain and rinse.
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the soaked fava beans, chopped cilantro, parsley, dill, cumin, coriander, salt, and black pepper. Stir well to combine.
- Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes to 1 hour, or until the fava beans are tender.
- Using an immersion blender or a regular blender, blend the mixture until smooth.
- Stir in the lemon juice and adjust the seasoning if needed.
- Serve hot with bread or rice.
