Bell Pepper and Chicken Stir Fry
This delicious stir fry combines colorful bell peppers and tender chicken in a flavorful sauce.
Ingredients - Serves 4
- Cooked rice - 4 cups (for serving)
- Green onions - 2, chopped (for garnish)
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced (assorted colors)
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken slices and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add onion and garlic. Stir fry for 2 minutes until fragrant.
- Add bell peppers and continue to stir fry for another 3-4 minutes until peppers are slightly tender.
- Return the cooked chicken to the skillet and pour in the sauce mixture. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste.
- Serve the stir fry over cooked rice and garnish with chopped green onions.
