Beef Udon
This hearty beef udon soup is made with tender beef, thick udon noodles, and flavorful broth.
Ingredients - Serves 2
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Baby bok choy - 2, halved
- Shiitake mushrooms - 4, sliced
- Green onions - 2, sliced
- Beef broth - 4 cups
- Sake - 1 tablespoon
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Udon noodles - 8 ounces
- Beef sirloin - 8 ounces, thinly sliced
Let's Get Started
- In a bowl, marinate the beef slices with soy sauce, mirin, and sake. Set aside for 10 minutes.
- Cook the udon noodles according to the package instructions. Drain and set aside.
- In a large pot, heat the sesame oil over medium heat. Add the marinated beef and cook until browned, about 2-3 minutes.
- Add the sliced mushrooms and cook for another 2 minutes.
- Pour in the beef broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
- Add the cooked udon noodles and baby bok choy to the pot. Cook for an additional 3-4 minutes, or until the bok choy is tender.
- Season with salt and pepper to taste.
- Serve the beef udon soup hot, garnished with sliced green onions.
