Baghali Ghatogh
Baghali Ghatogh is a traditional Persian dish made with lima beans, dill, and eggs. It is a flavorful and comforting vegetarian dish.
Ingredients - Serves 4
- Saffron - A pinch (optional)
- Lemon juice - 2 tablespoons
- Eggs - 4
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Ground cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Garlic - 3 cloves, minced
- Fresh dill - 1 bunch, chopped
- Dried lima beans - 1 cup
Let's Get Started
- Soak the dried lima beans in water overnight. Drain and rinse.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the soaked lima beans, turmeric, ground cumin, and salt to the pot. Stir well to coat the beans with the spices.
- Add enough water to cover the beans and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the beans are tender.
- Add the chopped dill to the pot and cook for an additional 10 minutes.
- In a separate bowl, beat the eggs with lemon juice. Slowly pour the egg mixture into the pot while stirring gently.
- Continue cooking for another 5 minutes, stirring occasionally, until the eggs are cooked and the mixture thickens slightly.
- Optional: If using saffron, dissolve it in a tablespoon of hot water and drizzle it over the dish before serving.
- Serve hot with steamed rice or bread.
