  1. Soak the dried lima beans in water overnight. Drain and rinse.
  2. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the soaked lima beans, turmeric, ground cumin, and salt to the pot. Stir well to coat the beans with the spices.
  4. Add enough water to cover the beans and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the beans are tender.
  5. Add the chopped dill to the pot and cook for an additional 10 minutes.
  6. In a separate bowl, beat the eggs with lemon juice. Slowly pour the egg mixture into the pot while stirring gently.
  7. Continue cooking for another 5 minutes, stirring occasionally, until the eggs are cooked and the mixture thickens slightly.
  8. Optional: If using saffron, dissolve it in a tablespoon of hot water and drizzle it over the dish before serving.
  9. Serve hot with steamed rice or bread.
