Avocado and Chicken Sandwich
This delicious avocado and chicken sandwich is packed with flavor and makes for a satisfying meal.
Ingredients - Serves 2
- Salt and pepper - To taste
- Lemon juice - 1 tablespoon
- Mayonnaise - 2 tablespoons
- Bread - 4 slices
- Red onion - 1/4, thinly sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Avocado - 1, ripe
- Chicken breast - 2, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Grill or cook the chicken breasts in a skillet until cooked through, about 4-5 minutes per side. Let them rest for a few minutes, then slice them into thin strips.
- In a small bowl, mash the avocado with lemon juice, salt, and pepper to make a spread.
- Toast the bread slices until golden brown.
- Spread mayonnaise on one side of each bread slice.
- On one slice of bread, spread the mashed avocado mixture.
- Layer the sliced chicken, lettuce, tomato, and red onion on top of the avocado spread.
- Top with another slice of bread and press gently to hold the sandwich together.
- Repeat with the remaining ingredients to make another sandwich.
- Slice the sandwiches in half and serve.
