Avocado and Chicken Sandwich

Let's Get Started

  1. Season the chicken breasts with salt and pepper.
  2. Grill or cook the chicken breasts in a skillet until cooked through, about 4-5 minutes per side. Let them rest for a few minutes, then slice them into thin strips.
  3. In a small bowl, mash the avocado with lemon juice, salt, and pepper to make a spread.
  4. Toast the bread slices until golden brown.
  5. Spread mayonnaise on one side of each bread slice.
  6. On one slice of bread, spread the mashed avocado mixture.
  7. Layer the sliced chicken, lettuce, tomato, and red onion on top of the avocado spread.
  8. Top with another slice of bread and press gently to hold the sandwich together.
  9. Repeat with the remaining ingredients to make another sandwich.
  10. Slice the sandwiches in half and serve.
