- Lemon wedges - For serving
- Parsley - For garnish

- White wine - 1/2 cup
- Fish stock - 4 cups
- Short-grain rice - 2 cups
- Squid ink - 4 sachets
- Squid - 500 grams, cleaned and cut into rings
- Garlic - 3 cloves, minced
- Onions - 1 large, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pan over medium heat.
- Add the onions and garlic and cook until the onions are soft and translucent, about 5 minutes.
- Add the squid and cook until it turns opaque, about 5 minutes.
- Add the squid ink and stir until everything is well coated.
- Add the rice and stir until it is well coated in the squid ink.
- Add the fish stock and white wine. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the rice is cooked and the liquid is absorbed, about 20-25 minutes.
- Season with salt and pepper to taste.
- Serve the Arroz Negro garnished with parsley and lemon wedges on the side.
