  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onions and garlic and cook until the onions are soft and translucent, about 5 minutes.
  3. Add the squid and cook until it turns opaque, about 5 minutes.
  4. Add the squid ink and stir until everything is well coated.
  5. Add the rice and stir until it is well coated in the squid ink.
  6. Add the fish stock and white wine. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the rice is cooked and the liquid is absorbed, about 20-25 minutes.
  7. Season with salt and pepper to taste.
  8. Serve the Arroz Negro garnished with parsley and lemon wedges on the side.
