Ingredients - Serves 4

Let's Get Started

  1. Cook the white rice according to package instructions.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
  3. Add the sliced plantains and fry until golden brown on both sides. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil and sauté the chopped onion and minced garlic until softened.
  5. Add the ground beef and cook until browned. Season with salt and pepper to taste.
  6. Pour in the tomato sauce and simmer for 5 minutes.
  7. In a separate skillet, fry the eggs to your desired doneness.
  8. To serve, place a scoop of cooked rice on each plate. Top with the ground beef mixture, fried plantains, and a fried egg.
  9. Garnish with fresh parsley and serve hot.
