Apricot Crisp Curry

Ingredients - Serves 4
- Butter - 1/4 cup, cold and diced
- Brown sugar - 1/4 cup
- Rolled oats - 1/2 cup
- All-purpose flour - 1/2 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Lime juice - 1 tablespoon
- Brown sugar - 2 tablespoons
- Vegetable broth - 1 cup
- Coconut milk - 1 can (13.5 oz)
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Apricots - 1 pound, pitted and halved

- Preheat the oven to 375°F.
- In a large skillet, heat some oil over medium heat. Add the onion, garlic, and ginger. Cook until the onion is translucent, about 5 minutes.
