Ingredients - Serves 6
- Ground cinnamon - 1/4 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Palm oil - 2 tablespoons
- Water - 6 cups
- Cornmeal - 2 cups
Let's Get Started
- In a large bowl, combine the cornmeal and water. Stir well to remove any lumps.
- Cover the bowl with a clean cloth and let it sit at room temperature for 24-48 hours to ferment.
- After fermentation, pour the fermented corn mixture into a blender and blend until smooth.
- In a large pot, heat the palm oil over medium heat.
- Add the blended corn mixture to the pot and stir continuously to prevent lumps.
- Cook for about 45-60 minutes, or until the mixture thickens and reaches a pudding-like consistency.
- Add sugar, vanilla extract, nutmeg, and cinnamon. Stir well to combine.
- Remove from heat and let it cool slightly before serving.
- Serve warm or chilled, and enjoy!
