Aab E Torsh
Aab-e Torsh is a traditional sour soup from the northern part of Iran. It is made with a variety of herbs, red kidney beans, and sour fruits.
Ingredients - Serves 4
- Salt and pepper - To taste
- Sour plums - 1/2 cup
- Pomegranate juice - 1 cup
- Chives - 1/2 cup, chopped
- Spinach - 1/2 cup, chopped
- Coriander - 1/2 cup, chopped
- Parsley - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Onions - 2, chopped
- Red kidney beans - 1 cup
Let's Get Started
- Soak the red kidney beans in water overnight.
- Drain the beans and place them in a large pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer for 1 hour.
- In a separate pan, sauté the onions and garlic until golden.
- Add the sautéed onions and garlic, chopped herbs, pomegranate juice, and sour plums to the pot with the beans.
- Season with salt and pepper, then simmer for another 30 minutes.
- Serve the soup hot, garnished with a few extra sour plums if desired.
