Yogurt Pancakes

These fluffy and delicious pancakes are made with yogurt for added tanginess and moisture.

Ingredients

  • Butter - 2 tablespoons, melted
  • Vanilla extract - 1 teaspoon
  • Milk - 1/2 cup
  • Plain yogurt - 1 cup
  • Egg - 1
  • Sugar - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg. Add the yogurt, milk, vanilla extract, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh fruits, or yogurt.
