Xoi Vo

Xoi Vo is a traditional Vietnamese sticky rice dish topped with mung bean paste and shredded coconut.

Ingredients

  • Shredded coconut - 1/2 cup
  • Salt - 1/2 teaspoon
  • Sugar - 1/4 cup
  • Coconut milk - 1 cup
  • Mung beans - 1 cup
  • Glutinous rice - 2 cups

Instructions

  1. Rinse the glutinous rice and mung beans separately under cold water.
  2. Soak the glutinous rice in water for at least 4 hours or overnight. Drain well.
  3. Steam the glutinous rice for 30 minutes or until cooked and sticky.
  4. Meanwhile, cook the mung beans in a pot of water until soft. Drain and mash into a paste.
  5. In a separate pot, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved.
  6. Add the cooked glutinous rice to the pot with the coconut milk mixture. Stir well to combine.
  7. Divide the sticky rice into serving bowls. Top each bowl with a spoonful of mung bean paste and a sprinkle of shredded coconut.
  8. Serve hot and enjoy!
