Tomaxelle

Tomaxelle is a traditional Italian dish from Liguria, made with beef, bread, and various herbs and spices. It's a type of stuffed meat roll, similar to a braciole.

Ingredients

  • Tomato sauce - 1 cup
  • White wine - 1/2 cup
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Marjoram - 1 teaspoon
  • Parsley - A handful, chopped
  • Garlic - 2 cloves, minced
  • Eggs - 2
  • Parmesan cheese - 50 grams, grated
  • Stale bread - 100 grams, soaked in milk and squeezed
  • Beef slices - 8 thin slices

Instructions

  1. In a bowl, combine the soaked bread, Parmesan cheese, eggs, garlic, parsley, marjoram, salt, and pepper. Mix well to create the stuffing.
  2. Lay out the beef slices and divide the stuffing equally among them. Roll up the slices and secure with toothpicks or kitchen twine.
  3. Heat the olive oil in a large pan over medium heat. Add the beef rolls and brown on all sides.
  4. Add the white wine to the pan and let it evaporate.
  5. Add the tomato sauce, cover the pan, and reduce the heat to low. Let the tomaxelle simmer for about 2 hours, until the meat is tender and the flavors are well combined.
  6. Remove the toothpicks or kitchen twine before serving. Enjoy your tomaxelle!
