Tarte aux Prunes is a delicious French plum tart made with a buttery crust and sweet plums.
Ingredients
Apricot jam - 2 tablespoons
Lemon juice - 1 tablespoon
Ground cinnamon - 1/2 teaspoon
Brown sugar - 1/4 cup
Plums - 1 pound, pitted and sliced
Egg - 1, beaten
Salt - 1/4 teaspoon
Granulated sugar - 1/4 cup
Unsalted butter - 1/2 cup, cold and cubed
All - purpose flour - 1 1/2 cups
Instructions
In a food processor, combine the flour, butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.
Add the beaten egg and pulse until the dough comes together.
Transfer the dough to a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 375°F (190°C).
On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch tart pan. Transfer the dough to the tart pan and press it into the bottom and sides.
In a bowl, combine the sliced plums, brown sugar, cinnamon, and lemon juice. Toss to coat the plums.
Spread the apricot jam evenly over the bottom of the tart crust.
Arrange the plum slices in a circular pattern over the jam.
Bake for 40-45 minutes, or until the crust is golden and the plums are tender.
Allow the tart to cool before serving. Serve at room temperature or chilled.
