Taps de Cadaqués

Taps de Cadaqués is a traditional Catalan dessert from the town of Cadaqués. It's a sweet pastry filled with custard and topped with pine nuts.

Ingredients

  • Pine nuts - 1/4 cup
  • Cornstarch - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Milk - 1 cup
  • Egg yolks - 2
  • Sugar - 1/2 cup
  • Butter - 1 cup, cold and cubed
  • All - purpose flour - 2 cups

Instructions

  1. In a large bowl, combine the flour and butter. Rub the butter into the flour until it resembles coarse breadcrumbs.
  2. Add the sugar and egg yolks and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. In a saucepan, combine the milk, vanilla extract, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens into a custard.
  4. Preheat the oven to 350°F (175°C).
  5. Roll out the dough and cut into circles. Place the circles in a muffin tin.
  6. Fill each dough circle with the custard and sprinkle with pine nuts.
  7. Bake for 20 minutes, or until the pastry is golden and the pine nuts are toasted.
  8. Allow to cool before serving.
