This hearty Tamale Pie is a classic comfort food, featuring a flavorful ground beef filling, topped with a cornbread crust.

Ingredients

  • Cheddar cheese - 1 cup, shredded
  • Milk - 1/3 cup
  • Egg - 1
  • Cornbread mix - 1 package (8.5 oz)
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Chili powder - 2 teaspoons
  • Black olives - 1/2 cup, sliced
  • Corn kernels - 1 cup
  • Diced tomatoes - 1 can (14.5 oz)
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Ground beef - 1 pound

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is no longer pink.
  3. Stir in the tomatoes, corn, olives, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  4. In a separate bowl, combine the cornbread mix, egg, and milk. Stir until just combined.
  5. Pour the beef mixture into a baking dish. Spread the cornbread batter over the top.
  6. Bake for 20 minutes, or until the cornbread is golden.
  7. Sprinkle the cheese over the top and bake for an additional 5 minutes, or until the cheese is melted.
