Swordfish Kebabs

These flavorful swordfish kebabs are perfect for grilling and make a delicious and healthy meal.

Ingredients

  • Skewers - 4-6, soaked in water
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into 1-inch pieces
  • Yellow bell pepper - 1, cut into 1-inch pieces
  • Red bell pepper - 1, cut into 1-inch pieces
  • Swordfish steaks - 1.5 lbs, cut into 1-inch cubes

Instructions

  1. In a bowl, combine the lemon juice, olive oil, minced garlic, dried oregano, salt, and pepper to make the marinade.
  2. Add the swordfish cubes to the marinade and toss to coat. Let marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated swordfish cubes, bell peppers, red onion, and cherry tomatoes onto the soaked skewers.
  5. Place the kebabs on the preheated grill and cook for about 4-5 minutes per side, or until the swordfish is cooked through and the vegetables are tender.
  6. Remove the kebabs from the grill and let them rest for a few minutes before serving.
  7. Serve the swordfish kebabs hot with your favorite side dishes or a fresh salad.
