Swiss Chard and Ricotta Gnocchi

These homemade gnocchi are made with Swiss chard and ricotta cheese, resulting in a delicious and flavorful dish.

Ingredients

  • Lemon zest - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh sage leaves - 8-10 leaves
  • Butter - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • All - purpose flour - 1 1/2 cups
  • Egg - 1
  • Parmesan cheese - 1/2 cup, grated
  • Ricotta cheese - 1 cup
  • Swiss chard - 1 bunch

Instructions

  1. Wash the Swiss chard thoroughly and remove the stems. Chop the leaves into small pieces.
  2. In a large pot of boiling water, blanch the Swiss chard leaves for 2-3 minutes. Drain and squeeze out any excess water.
  3. In a mixing bowl, combine the blanched Swiss chard, ricotta cheese, Parmesan cheese, egg, flour, salt, and black pepper. Mix well until a dough forms.
  4. Divide the dough into small portions and roll each portion into a rope shape on a floured surface.
  5. Cut the ropes into bite-sized pieces and press each piece with a fork to create ridges.
  6. Bring a large pot of salted water to a boil. Cook the gnocchi in batches for about 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and set aside.
  7. In a separate pan, melt the butter over medium heat. Add the sage leaves and minced garlic. Cook until the butter starts to brown and the sage leaves become crispy.
  8. Add the cooked gnocchi to the pan and toss gently to coat them with the butter and sage mixture.
  9. Sprinkle with lemon zest and serve hot.
