Swiss Chard and Mushroom Ravioli

Delicious homemade ravioli filled with sautéed Swiss chard and mushrooms.

Ingredients

  • Water - 1/2 cup
  • All - purpose flour - 2 cups
  • Salt and pepper - To taste
  • Egg - 1
  • Parmesan cheese - 1/2 cup, grated
  • Ricotta cheese - 1 cup
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, finely chopped
  • Swiss chard - 1 bunch, stems removed and leaves chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add Swiss chard and mushrooms to the skillet and cook until wilted and tender, about 5 minutes.
  4. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine the cooked Swiss chard and mushrooms with ricotta cheese, Parmesan cheese, egg, salt, and pepper.
  6. Mix well until all ingredients are evenly incorporated.
  7. On a clean surface, sprinkle some flour and roll out the pasta dough into thin sheets.
  8. Place spoonfuls of the Swiss chard and mushroom filling onto one sheet of pasta, leaving space between each spoonful.
  9. Brush water around the filling to moisten the dough.
  10. Cover with another sheet of pasta and press around the filling to seal the ravioli.
  11. Use a ravioli cutter or a knife to cut out individual ravioli squares.
  12. Bring a large pot of salted water to a boil.
  13. Carefully drop the ravioli into the boiling water and cook until they float to the surface, about 3-4 minutes.
  14. Remove the cooked ravioli from the water using a slotted spoon and transfer to serving plates.
  15. Serve hot with your favorite sauce or simply drizzle with olive oil and sprinkle with Parmesan cheese.
