Sweet Potato Stew

Ingredients

  • Lime - 1, juiced
  • Fresh cilantro - 1/4 cup, chopped
  • Salt and pepper - To taste
  • Cayenne pepper - 1/4 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Vegetable broth - 4 cups
  • Canned diced tomatoes - 1 can (14 oz)
  • Red bell pepper - 1, diced
  • Celery - 2 stalks, sliced
  • Carrots - 2 medium, sliced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Sweet potatoes - 3 large, peeled and cubed

Instructions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
  3. Add the sweet potatoes, carrots, celery, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  4. Pour in the canned diced tomatoes and vegetable broth. Stir in the cumin, paprika, cayenne pepper, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the sweet potatoes are tender.
  6. Remove the pot from heat and stir in the fresh cilantro and lime juice.
  7. Serve the sweet potato stew hot, garnished with additional cilantro if desired.
