Sri Lankan Curry

This aromatic and flavorful Sri Lankan curry is made with a blend of spices, coconut milk, and a variety of vegetables or meat.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Vegetables or meat - 2 cups, diced
  • Coconut milk - 1 can (400ml)
  • Salt - To taste
  • Chili powder - 1/2 teaspoon
  • Cardamom - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Coconut oil - 2 tablespoons

Instructions

  1. Heat coconut oil in a large pan over medium heat.
  2. Add the chopped onion and cook until it becomes translucent.
  3. Add minced garlic and grated ginger, and cook for another minute.
  4. In a small bowl, mix together curry powder, turmeric, cumin, coriander, cinnamon, cardamom, chili powder, and salt.
  5. Add the spice mixture to the pan and cook for a minute, stirring constantly.
  6. Pour in the coconut milk and bring to a simmer.
  7. Add the diced vegetables or meat to the pan and stir well to coat them with the curry sauce.
  8. Cover the pan and let it simmer for about 20-30 minutes, or until the vegetables are tender or the meat is cooked through.
  9. Stir in lime juice and fresh cilantro.
  10. Serve hot with steamed rice or naan bread.
