Spinach and Pesto Pasta

This delicious spinach and pesto pasta is a quick and easy vegetarian dish that is packed with flavor.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 1/4 cup
  • Pine nuts - 1/4 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic - 2 cloves
  • Basil leaves - 1 cup
  • Spinach - 4 cups
  • Pasta - 8 ounces

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a food processor, combine the spinach, basil leaves, garlic, Parmesan cheese, pine nuts, olive oil, salt, and pepper. Blend until smooth to make the pesto sauce.
  3. In a large pan, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and toss to coat.
  4. Add the pesto sauce to the pan and stir until the pasta is evenly coated.
  5. Cook for an additional 2-3 minutes, or until the spinach wilts slightly.
  6. Serve hot and enjoy!
