Spicy Indian Curry Wraps

These spicy Indian curry wraps are filled with flavorful vegetables and wrapped in a warm tortilla.

Ingredients

  • Tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Salt - To taste
  • Cayenne pepper - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Potato - 1, diced
  • Cauliflower florets - 1 cup
  • Carrot - 1, julienned
  • Bell pepper - 1, thinly sliced
  • Onion - 1, thinly sliced
  • Vegetable oil - 2 tablespoons

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add the onion, bell pepper, carrot, cauliflower, and potato. Cook until the vegetables are tender, about 10 minutes.
  3. Add the minced garlic, grated ginger, curry powder, turmeric, cumin, cayenne pepper, and salt. Stir well to coat the vegetables in the spices.
  4. Cook for another 2-3 minutes, until the spices are fragrant.
  5. Remove from heat and stir in the lemon juice and chopped cilantro.
  6. Warm the tortillas in a separate pan or in the microwave.
  7. Divide the vegetable filling evenly among the tortillas and roll them up tightly.
  8. Serve the spicy Indian curry wraps warm and enjoy!
