Sopa de Plátano

Sopa de Plátano, or Plantain Soup, is a delicious and comforting soup made with ripe plantains, vegetables, and spices.

Ingredients

  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Vegetable broth - 4 cups
  • Red bell pepper - 1, diced
  • Celery - 1 stalk, diced
  • Carrot - 1, diced
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Ripe plantains - 4, peeled and sliced

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onion and garlic, and sauté until fragrant and translucent.
  3. Add the carrot, celery, and red bell pepper, and cook for a few minutes until slightly softened.
  4. Add the sliced plantains, cumin, paprika, salt, and pepper. Stir well to coat the plantains and vegetables with the spices.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for about 20 minutes, or until the plantains are tender.
  6. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  7. Return the soup to the pot and stir in the chopped cilantro and lime juice.
  8. Simmer for another 5 minutes to allow the flavors to meld together.
  9. Serve hot and garnish with additional cilantro, if desired.
