Shrimp Creole

This delicious shrimp creole is a classic Louisiana dish made with shrimp, tomatoes, and a flavorful blend of spices.

Ingredients

  • Green onions - 1/4 cup, chopped
  • Cooked rice - 4 cups
  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Chicken broth - 1 cup
  • Tomato paste - 2 tablespoons
  • Tomatoes - 2 cups, diced
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, chopped
  • Green bell pepper - 1, chopped
  • Onion - 1 large, chopped
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the tomatoes, tomato paste, chicken broth, bay leaf, cayenne pepper, paprika, thyme, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a simmer and let it cook for 10 minutes, stirring occasionally.
  5. Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 5 minutes.
  6. Remove the bay leaf from the skillet and discard.
  7. Serve the shrimp creole over cooked rice and garnish with chopped green onions.
