Sausage and Onion Casserole

A hearty and comforting casserole made with sausages, onions, and a rich gravy.

Ingredients

  • Milk - 1/4 cup
  • Butter - 2 tablespoons
  • Potatoes - 4 large, peeled and cut into chunks
  • Salt and pepper - To taste
  • Tomato paste - 2 tablespoons
  • Worcestershire sauce - 1 tablespoon
  • Beef stock - 2 cups
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onions - 2 large, sliced
  • Sausages - 8

Instructions

  1. Preheat the oven to 350°F.
  2. In a large frying pan, brown the sausages in the olive oil. Remove and set aside.
  3. In the same pan, add the onions and garlic and cook until softened.
  4. Add the beef stock, Worcestershire sauce, tomato paste, salt, and pepper to the pan. Bring to a simmer.
  5. Place the sausages in a casserole dish and pour over the onion and stock mixture.
  6. Cover and bake in the oven for 30 minutes.
  7. While the casserole is cooking, boil the potatoes until tender. Drain and mash with the butter and milk. Season with salt and pepper.
  8. Remove the casserole from the oven and top with the mashed potatoes.
  9. Return to the oven, uncovered, and bake for a further 30 minutes, or until the potatoes are golden and the gravy is bubbling.
