Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Bay leaf - 1
  • Vegetable broth - 1 cup
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 1 can (14 oz)
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, diced
  • Celery - 2 stalks, diced
  • Carrots - 2 medium, diced
  • Onion - 1 large, finely chopped
  • Fish fillets - 4 pieces

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the fish fillets with salt and pepper.
  3. In a large skillet, heat some olive oil over medium heat.
  4. Add the chopped onion, carrots, celery, and red bell pepper. Sauté until the vegetables are tender.
  5. Add the minced garlic and cook for another minute.
  6. Stir in the canned diced tomatoes, tomato paste, vegetable broth, bay leaf, dried oregano, salt, and pepper. Simmer for 10 minutes.
  7. Place the fish fillets in a baking dish and pour the tomato sauce over them.
  8. Cover the baking dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through.
  10. Garnish with fresh parsley before serving.
