Roz Meammar is a traditional Middle Eastern rice dish cooked with meat and aromatic spices.
Ingredients
Water - 4 cups
Raisins - 1/2 cup
Almonds - 1/2 cup, sliced
Butter - 4 tablespoons
Salt and pepper - To taste
Turmeric - 1/2 teaspoon
Cardamom - 5 pods, crushed
Cinnamon - 1 teaspoon
Garlic - 4 cloves, minced
Onion - 1 large, finely chopped
Lamb or beef - 500g, cubed
Basmati rice - 2 cups
Instructions
Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
Add the meat cubes to the pot and cook until browned on all sides.
Add the cinnamon, cardamom, turmeric, salt, and pepper to the pot. Stir well to coat the meat with the spices.
Add the soaked and drained rice to the pot and mix it with the meat and spices.
Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the rice is cooked and the meat is tender.
In a separate pan, heat a tablespoon of butter and sauté the sliced almonds and raisins until golden.
Serve the Roz Meammar hot, garnished with the sautéed almonds and raisins.
