Rissóis de Camarão

Rissóis de Camarão, or Portuguese Shrimp Turnovers, are a popular snack in Portugal. They are small, savory fried turnovers filled with a creamy shrimp filling.

Ingredients

  • Vegetable oil - For frying
  • Breadcrumbs - 1 cup
  • Eggs - 2, beaten
  • Heavy cream - 1/2 cup
  • White wine - 1/4 cup
  • Parsley - 1 tablespoon, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Shrimp - 1 cup, cooked and chopped
  • Salt - 1 teaspoon
  • Butter - 2 tablespoons
  • Water - 1 cup
  • Flour - 2 cups

Instructions

  1. In a saucepan, combine the flour, water, butter, and salt. Stir over medium heat until a dough forms. Let it cool.
  2. In another saucepan, sauté the onion and garlic until soft. Add the shrimp, parsley, and wine. Cook until the wine has evaporated.
  3. Stir in the heavy cream and cook until the mixture thickens. Let it cool.
  4. Roll out the dough and cut into circles. Place a spoonful of the shrimp filling on each circle. Fold the dough over the filling and seal the edges.
  5. Dip each turnover in the beaten eggs, then coat with breadcrumbs.
  6. Heat the vegetable oil in a deep fryer or large saucepan to 375°F (190°C). Fry the turnovers until golden brown, about 2-3 minutes. Drain on paper towels.
