Reindeer Meatballs

These juicy and flavorful meatballs are made with ground reindeer meat and a blend of aromatic spices.

Ingredients

  • Lingonberry jam - 1/4 cup
  • Heavy cream - 1/2 cup
  • Beef broth - 2 cups
  • Flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Nutmeg - 1/4 teaspoon
  • Allspice - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Egg - 1 large
  • Breadcrumbs - 1/2 cup
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Ground reindeer meat - 1 pound

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the ground reindeer meat, onion, garlic, breadcrumbs, egg, salt, black pepper, allspice, and nutmeg.
  3. Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for 20 minutes, or until they are cooked through and lightly browned.
  5. While the meatballs are baking, make the gravy. Melt the butter in a large skillet over medium heat.
  6. Add the flour and whisk until smooth. Cook for 1-2 minutes, or until the mixture is lightly browned.
  7. Gradually whisk in the beef broth and bring to a simmer.
  8. Add the heavy cream and lingonberry jam and stir until the jam is melted and the sauce is smooth.
  9. Add the meatballs to the skillet and stir to coat them in the gravy.
  10. Simmer for 5-10 minutes, or until the meatballs are heated through and the sauce has thickened.
  11. Serve hot with mashed potatoes or lingonberry sauce, if desired.
