Red Snapper Veracruz

This is a traditional Mexican dish where the fish is cooked with a sauce made of tomatoes, olives, and capers.

Ingredients

  • Salt and pepper - To taste
  • Jalapeno - 1, seeded and chopped
  • Capers - 2 tablespoons
  • Green olives - 1/2 cup, sliced
  • Tomatoes - 4, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons
  • Red snapper fillets - 4 (6 ounce)

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the tomatoes, olives, capers, and jalapeno to the skillet. Season with salt and pepper. Cook for 10 minutes, until the tomatoes are soft.
  4. Place the red snapper fillets in a baking dish. Pour the tomato mixture over the fish.
  5. Bake for 15-20 minutes, until the fish is cooked through and flakes easily with a fork.
