Ratatouille Omelette

A delicious blend of classic ratatouille vegetables with fluffy eggs, perfect for a hearty breakfast or brunch.

Ingredients

  • Fresh basil - A handful, chopped
  • Salt and pepper - To taste
  • Eggs - 4
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1, diced
  • Bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Eggplant - 1 small, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a non-stick frying pan over medium heat.
  2. Add the eggplant, zucchini, bell pepper, tomato, onion, and garlic. Cook for 10-15 minutes, until the vegetables are soft.
  3. In a bowl, beat the eggs and season with salt and pepper.
  4. Pour the eggs over the cooked vegetables in the pan, making sure the vegetables are evenly distributed.
  5. Cook the omelette on low heat for about 5 minutes, until the eggs are set.
  6. Sprinkle the chopped basil over the omelette before serving.
