Ratatouille Niçoise

Ingredients

  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Basil - 1 handful, chopped
  • Tomatoes - 5, chopped
  • Bell peppers - 2, cut into chunks
  • Zucchini - 2, cut into chunks
  • Eggplant - 1 large, cut into chunks
  • Garlic - 3 cloves, minced
  • Onions - 2, chopped
  • Olive oil - 3 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the eggplant, zucchini, and bell peppers and cook for 10 minutes, stirring occasionally.
  4. Add the tomatoes, basil, thyme, salt, and pepper. Reduce the heat to low, cover the pot, and simmer for 45 minutes, stirring occasionally.
  5. Taste and adjust the seasoning if necessary. Serve hot or at room temperature.
