Rack of Quail

This elegant dish features succulent rack of quail seasoned with herbs and served with a side of roasted vegetables.

Ingredients

  • Butter - 2 tablespoons
  • Garlic cloves - 4, minced
  • Brussels sprouts - 8
  • Baby potatoes - 8
  • Baby carrots - 8
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh thyme - 1 sprig, chopped
  • Fresh rosemary - 1 sprig, chopped
  • Olive oil - 2 tablespoons
  • Rack of quail - 2 racks

Instructions

  1. Preheat the oven to 400°F.
  2. Season the quail racks with salt, black pepper, chopped rosemary, and chopped thyme.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the quail racks in the skillet for 2-3 minutes on each side, until browned.
  5. Transfer the skillet to the preheated oven and roast for 12-15 minutes, or until the quail is cooked through.
  6. While the quail is roasting, prepare the roasted vegetables.
  7. In a separate baking dish, toss the baby carrots, baby potatoes, Brussels sprouts, minced garlic, salt, and black pepper with olive oil.
  8. Roast the vegetables in the oven for 20-25 minutes, or until they are tender and golden brown.
  9. Remove the quail racks from the oven and let them rest for a few minutes.
  10. In a small saucepan, melt the butter over low heat.
  11. Drizzle the melted butter over the quail racks.
  12. Serve the rack of quail with the roasted vegetables on the side.
