Prawn and Zucchini Linguine

This delicious linguine dish combines succulent prawns, fresh zucchini, and flavorful herbs for a light and satisfying meal.

Ingredients

  • Parmesan cheese - 1/4 cup, grated
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium-sized, thinly sliced
  • Prawns - 200g, peeled and deveined
  • Linguine pasta - 200g

Instructions

  1. Cook the linguine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  3. Add the prawns to the skillet and cook until they turn pink and are cooked through, about 2-3 minutes per side. Remove the prawns from the skillet and set aside.
  4. In the same skillet, add the sliced zucchini and cherry tomatoes. Cook until the zucchini is tender and the tomatoes are slightly softened, about 5 minutes.
  5. Return the prawns to the skillet and add the cooked linguine pasta. Toss everything together to combine.
  6. Add the chopped basil, lemon juice, salt, and pepper. Stir well to coat the ingredients.
  7. Remove from heat and serve the prawn and zucchini linguine hot, garnished with grated Parmesan cheese.
