Potato Leek Soup

A creamy and comforting soup made with potatoes and leeks.

Ingredients

  • Chives - 2 tablespoons, chopped (for garnish)
  • Salt and pepper - To taste
  • Heavy cream - 1 cup
  • Vegetable broth - 4 cups
  • Potatoes - 4 medium, peeled and diced
  • Leeks - 3 large, white and light green parts only, sliced
  • Butter - 2 tablespoons

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced leeks and cook until softened, about 5 minutes.
  3. Add the diced potatoes and vegetable broth to the pot.
  4. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes to heat through.
  8. Serve hot, garnished with chopped chives.
