Pinto Bean and Beef Stuffed Peppers

These delicious stuffed peppers are filled with a flavorful mixture of pinto beans, ground beef, and spices.

Ingredients

  • Fresh cilantro - For garnish
  • Shredded cheddar cheese - 1 cup
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Tomato sauce - 1 cup
  • Cooked pinto beans - 1 cup
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Ground beef - 1 pound
  • Bell peppers - 6

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened.
  4. Add the cooked pinto beans, tomato sauce, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine.
  5. Simmer the mixture for 5 minutes, then remove from heat.
  6. Fill each bell pepper with the beef and bean mixture, packing it tightly.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25 minutes, then remove the foil and sprinkle the shredded cheddar cheese on top of each pepper.
  9. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro before serving.
