Petite Tender

This petite tender steak is cooked to perfection and served with a rich red wine sauce.

Ingredients

  • Water - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Fresh thyme - 1 sprig
  • Beef broth - 1 cup
  • Red wine - 1 cup
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Butter - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Petite tender steak - 2 steaks, about 8 oz each

Instructions

  1. Preheat the oven to 400°F.
  2. Season the petite tender steaks with salt and black pepper.
  3. Heat the olive oil in an oven-safe skillet over high heat.
  4. Sear the steaks for 2-3 minutes on each side, until browned.
  5. Transfer the skillet to the preheated oven and cook for 8-10 minutes for medium-rare, or until desired doneness.
  6. Remove the steaks from the skillet and let them rest for a few minutes.
  7. In the same skillet, melt the butter over medium heat.
  8. Add the shallots and garlic, and cook until softened, about 2 minutes.
  9. Pour in the red wine and beef broth, and add the fresh thyme.
  10. Bring the mixture to a simmer and cook for 5 minutes to reduce the sauce.
  11. In a small bowl, mix the cornstarch with water to make a slurry.
  12. Add the slurry to the sauce and cook for an additional 2 minutes, until thickened.
  13. Slice the rested steaks and serve with the red wine sauce.
