  • Peaches - 2, peeled and diced
  • Vanilla extract - 1 teaspoon
  • Butter - 2 tablespoons, melted
  • Egg - 1

  • Sugar - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
  4. Gently fold in the diced peaches and plums.

  7. Repeat with the remaining batter.
  8. Serve the pancakes warm with maple syrup and additional diced peaches and plums on top, if desired.
