Peach and Apricot Parfait

This refreshing peach and apricot parfait is a perfect summer dessert.

Ingredients

  • Mint leaves - For garnish
  • Granola - 1/4 cup
  • Honey - 2 tablespoons
  • Greek yogurt - 1 cup
  • Apricots - 2, ripe and sliced
  • Peaches - 2, ripe and sliced

Instructions

  1. In a glass or parfait dish, layer sliced peaches and apricots.
  2. In a separate bowl, mix Greek yogurt and honey until well combined.
  3. Spoon a layer of the yogurt mixture over the fruit.
  4. Repeat the layers until all the fruit and yogurt mixture is used.
  5. Sprinkle granola on top for added crunch.
  6. Garnish with fresh mint leaves.
  7. Serve immediately and enjoy!
