Pancit Lomi

Pancit Lomi is a Filipino noodle dish made with thick egg noodles, meat, and vegetables in a flavorful broth.

Ingredients

  • Salt and pepper - To taste
  • Green onions - 2 stalks, chopped
  • Egg - 1, beaten
  • Cornstarch - 2 tablespoons, dissolved in water
  • Chicken broth - 4 cups
  • Oyster sauce - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Cabbage - 1/2 small head, shredded
  • Carrots - 2 medium, julienned
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Shrimp - 250 grams, peeled and deveined
  • Chicken breast - 250 grams, sliced
  • Pork belly - 250 grams, sliced
  • Lomi noodles - 500 grams

Instructions

  1. In a large pot, heat some oil and sauté the garlic and onion until fragrant.
  2. Add the pork belly and chicken breast. Cook until browned.
  3. Add the shrimp and cook until pink and cooked through.
  4. Pour in the soy sauce and oyster sauce. Stir well to coat the meat and shrimp.
  5. Add the carrots and cabbage. Cook for a few minutes until slightly softened.
  6. Pour in the chicken broth and bring to a boil.
  7. Add the lomi noodles and cook according to package instructions.
  8. Once the noodles are cooked, thicken the broth by slowly pouring in the dissolved cornstarch while stirring continuously.
  9. Drizzle in the beaten egg while stirring gently to create egg ribbons.
  10. Season with salt and pepper to taste.
  11. Garnish with chopped green onions.
  12. Serve hot and enjoy!
